Handy tips

  • Cake sizes are measured across the top (diameter for round cakes, side length for square cakes).
  • "1kg tubs" is rounded up so you won't run short. A little extra is handy for rolling, trimming and patching.
  • For tiered cakes, add up the amount for each tier.
  • Rolling thinner uses less fondant, rolling thicker uses more. Around 4–5mm is a good everyday thickness.
